Kookoo kadoo sabz is one of the delicious and fancy Iranian kookoo which can be used in weight losing diets in addition to being served as a light lunch or dinner meal.

The recipe of kookoo kadoo sabz
First wash the zucchini well, then rinse them and then dry them with a clean cloth and then chop off their caps and without peeling them grate them and while doing so add some salt on them.
Then let the zucchini rest for 10 minutes to get rid of their excessive juice. During this remaining 10 minutes prepare the rest of the ingredients of the kookoo. Clean and wash the onions and dice them on the kitchen board and put them aside.
Then place the grated zucchini in the strainer and press it hardly with your hand to get rid of its excessive water and then pour the grated zucchini in a bowl and pour the chopped onions on them.
Break the eggs in a separate bowl and make sure they’re fine and fresh and then add the flour little by little to prevent it from being shaped into rolls, and then mix it well with a spoon so the flour doesn’t become rolls in the eggs.
Add the turmeric, salt, black pepper and thyme as much as you like to the mixture of flour and eggs and mix the ingredients well and add them to the grated zucchini and onion and mix all the ingredients well to have an even mixture.
After the mixture of kookoo is ready place the pan on low heat and pour some oil in it and let it heat up and then take a full spoon of the mixture and pour it in the pan and shape it with a spoon very quickly and neat its edges.
Fry the rest of the mixture in the pan just like this. After frying one side of the kookoo turn them to the other side so the other side fries and becomes golden as well. Or if you like you can pour all of the mixture at once to the pan.
Then neat it in the pan and smoothen its surface so that it fries and then split it to half with a skimmer and then turn each half to the other side and fry it and after kookoo is ready enjoy it with tomatoes and pickles.
If you want to add mushroom to kookoo kadoo sabz, first dice or slice the mushroom, and fry them with a bit of oil to get rid of its excessive juice. Now put the mushroom aside to cool it down, and then add it to the mixture of kookoo.
